THAI RED CURRY VEGETABLE SOUP

 This soup is made from mixed vegetablea and hence has  a lot of health benefits. Vegetables are loaded with fiber and helps in digestion and relieves constipation. Also they are loaded with vitamins and minerals and antioxidants and hence boosts immunity. They have a good content of water and therefore are low in calorie and aids in weight loss.


Method

In a pan heat the oil and add snow peas, lemon grass, straw mushrooms and saute for 2 minute.

Add Kaffir lime leaves, red curry paste and stir well

Then add 4 cups of water and mix well and let the water boil. Then add cabbage, red chilies and salt and cook for another 3-4 minutes.

Remove from heat , add lemon juice , garnish with coriander and serve hot in a bowl.

Ingredients

Straw Mushrooms (halved)- 1/2 katori

Green peas- 1/2 katori

Tofu cubes-1/2 katori

Red and yellow peppers (chopped)- 1 katori

Fresh red chilies (sliced)- 2-3

Kaffir lime leaves- 1 tsp

Lemon grass (sliced)- 1 tbsp

Bamboo shoots- 2-3 stalk

Red curry paste- 1 tsp

Fresh coriander leaves- 2 tbsp

Lemon juice- 1 tsp

Oil- 1/2 tsp

Salt- to taste
