Spinach rice

Spinach rice is a simple and flavourful Indian rice recipe cooked with spinach and seasoned with Indian spices. This is very easy and healthy dish to make. It is a healthy way to get all the goodness of spinach as part of main course meals. It can be made both from fresh rice or leftover rice. You can also add veggies of your choice.
Method
- Heat oil in a heavy bottom pan over medium heat. Add cumin seeds, curry leaves, ginger and garlic and saute for few seconds.
- Now add tomatoes, turmeric powder, coriander powder, garam masala powder, sambar masala and salt.
- Add spinach and cook till tomatoes and spinach becomes soft.
- Now add washed rice and add water and mix well cover & cook.
- Once the water evaporates, simmer for 5-10 minutes.
- Serve hot with raita.

- Brown rice- 30 gms
- Spinach- 50 gms (chopped)
- Cumin seeds- 1 tsp
- Green cardamom- 1
- Black cardamom- 1
- Star anise- 1
- Ginger- ½ tsp (grated)
- Garlic- 2 tsp
- Green chillies- 2 (finely chopped)
- Tomato- 50 gms (finely chopped)
- Onion- 50 gms (sliced)
- Curry leaves- 5-6
- Turmeric powder- ½ tsp
- Garam masala powder- ¾ tsp
- Coriander powder- ½ tsp
- Sambar powder- ½ tsp
- Oil- 1 tsp
- Salt- as per taste
