QUINOA SWEET POTATO SALAD
Quinoa sweet potato salad is a very healthy dish as well as diet friendly and helps lose weight. Sweet potato contains iron which helps build immune system and is a rich source of Vitamin C, Vitamin B6 and Vitamin D which helps build healthy bones. Quinoa is a grain which is very high on fiber with low glycemic index and hence controls blood sugar level and is gluten free and helps in weight loss.
Boil the vegetable broth in a vessel and then add quinoa and simmer and cover and cook for about 5-6 minutes until quinoa is tender. Remove it from heat.
Let quinoa stand covered for 5 minutes, and then fluff it with a fork.
Heat the oil in a vessel and add grated sweet potato and cook 5 minutes, or until beginning to turn tender.
Now add garlic, cherry tomatoes and kale; cook until greens are slightly wilted.
Now add quinoa, mix well and then remove from heat, and cover the vessel.
Garnish with cottage cheese, black pepper and serve

Cottage cheese- 30 g
Kale/ Spinach, chopped- 1 cup
Black pepper- ¼ tsp.
