Quinoa is one of the most popular super foods of this decade.  It’s a seed, not a grain, which makes it gluten-free. It is high in protein, fiber, amino acids and a great source of minerals. Quinoa’s higher protein and fiber content makes it a popular and healthy substitute for many grains like rice, wheat, pasta etc. It’s a delicious take on the traditional Indian biryani. Quinoa replaces rice in this recipe, quinoa is very delicious, flavorful and packed with protein and nutrients. Fresh herbs like mint and coriander gives a pleasant flavour to the biryani. Enjoy this yummy quinoa biryani with raita..!!!!


Method

  • Wash chicken and drain the excess water. Marinate chicken with other ingredients and cover it, keep it aside for at least 30 minutes.
  • Heat oil in a pressure cooker, add all whole spices then add onion, green chilli and saute for few minutes.
  • Add ginger garlic paste and saute for 4-5 minutes.
  • Now add tomatoes and saute till it turns soft and mushy.
  • Now add marinated chicken and cook till it’s 3/4th cooked. Now add water and allow it to boil for 5- 10 minutes, then add chopped coriander and mint.
  • Cook quinoa with little of whole spices and curry leaves.
  • Now layer  with quinoa and chicken gravy and simmer for 5 minutes.
  • Garnish with coriander and serve hot with raita.

Ingredients

  • Quinoa- 30 gms (blanched)
  • Chicken- 90 gms
  • Onion- 25 gms (sliced)
  • Tomato- 25 gms (chopped)
  • Green chillies-2 (slitted)
  • Ginger garlic paste- 1 tsp
  • Mint leaves- 3 tbsp (chopped)
  • Coriander leaves- 3 tbsp (finely chopped)
  • Turmeric powder- ½ tsp
  • Red chilli powder- ½ tsp
  • Coriander powder- ½ tsp
  • Garam masala powder- 1tsp
  • Curd- ½ cup
  • Cumin seeds- ½ tsp
  • Bay leaves- 3
  • Star anise- 1
  • Black cardamom- 1
  • Green cardamom- 1
  • Cinnamon stick- 1
  • Water- as required
  • Oil- 1 tsp
  • Salt- as per taste
