Quinoa and Oats porridge

Rich in fibre and protein, Spicy Quinoa and Oats Porridge is an easy-to-make meal at any time of the day. Prepared using oats, quinoa, peas, onions, tomatoes and a few spices, this simple recipe is light on stomach and can be digested easily. You will be surprised to know that this one dish can cover your daily quota of nutrients. Pack the dish in kid's lunchbox and they will finish it in no time. Try it for your friends and family and enjoy with your loved ones!


Method

  • Dry roast quinoa and oats separately in a large pan for 3 to 5 minutes on medium flame. Once they are crisp, set them aside.
  • In the same pan, add some oil, ginger, cumin seeds, curry leaves and green chillies.
  • When the cumin seeds began to crackle, add onions; saute until the onions turn translucent. Add in the turmeric, tomatoes and peas. Saute for 2 minutes. Sprinkle salt as needed.
  • Add in 4 cups of water to the vegetables and bring it to boil. Add the roasted quinoa. Let them cook for about 10 minutes. When the quinoa is half cooked, add in the roasted oats.
  • Stir gently on low heat to get rid of any lumps. Cover and let it cook for another 10 minutes. Turn off the heat. Garnish with chopped cilantro. Serve hot. Enjoy!

  • Quinoa – 30 gms
  • Oats – 15 gms
  • Cumin seeds – ¼ tsp
  • Onion – 1 medium size
  • Tomatoes – 1 small
  • Green chilli – 2 in no
  • Cilantro (coriander) – handful
  • Curry leaves - few
  • Peas – 10gms 
  • Ginger – ½ tsp
  • Turmeric – ¼ tsp
  • Salt - as required 
  • Oil – 1 and ½ tsp
