Japanese Eggplant

This dish is made of eggplant, which is very low in calorie and is a good source of fibre, vitamins and minerals thus making it a very ideal ingredient in weight loss diet recipes. It will not only help you lose weight but will also provide adequate nutrition for the body. Eggplant also contains phytonutrients such as nasunin and chlorogenic acid


Method

  • Wash and peel the eggplant
  • Cut it into cubes of about 1/2 inch.
  • Spray the pan with oil.
  • Put the eggplant in the pan and sauté it until it softens.
  • Mix all the remaining ingredients with the eggplant.
  • Cook eggplant until it is soft and evenly coated with sauce.

Ingredients

Eggplant cubed- ½

Garlic minced- ¼ tbsp

Ginger-½tbsp

Rice vinegar-1 tbsp

Soy sauce substitute-1½tbsp

Sesame oil-¼ tbsp

Brown Sugar-½tbsp
