CARROT CORIANDER SALAD

Carrot coriander salad is a great way to use up those leftover carrots and to add some extra beta-carotene to your diet. Fresh coriander go really well with carrots (with soups and grilled chicken) and a little garlic, black pepper powder and lemon juice add a huge boost of flavor.


Method

  1. Boil the carrots for 4 mins or until just tender, then drain well.
  2. In a bowl mix together the olive oil, chopped coriander and garlic, lemon juice, salt and black pepper, then toss with the carrots.
  3. Serve hot or warm with soup, grilled chicken or fish.

Ingredients

Carrots – 100 gms (sliced)

Coriander – 1 tbsp (chopped)

Olive oil – ½ tsp

Garlic – ½ clove (finely chopped)

Lemon juice – 2 tsp

Black pepper – 2 pinch

Salt – as per taste.
